After owning a well-regarded Toronto restaurant Hopgood’s Foodliner for many years, Geoff and Lucy Hopgood along with their two young daughters, decided it was time to close up shop and move East, back to the ocean and a more balanced and elemental life. After much trial and error, Geoff figured out the method of coaxing perfect salt crystals from the beautiful waters of the Annapolis Basin in Nova Scotia and so, Annapolis Salt came to be. The Hopgood’s now call Grand Pré, Nova Scotia home, pursuing their passion to create premium flaked sea salt.




Water is harvested from a couple of choice locations along the Bay of Fundy to create this distinctly East Coast Canadian product.  Taming the infinite variables that the ocean brings is all part of the science and art of salt-making – weather, tides, salinity levels and mineral content are all things that must be considered and respected in this delicate balance. The Bay of Fundy boasts the distinction of having the highest tides in the world – salt water rushes in and out twice a day, constantly replenishing itself. The water harvested is first filtered, boiled, then slowly evaporated.  The resulting crystals are then carefully skimmed from the brine and dried further.  Annapolis Salt is intended as a premium flaked salt, to be used as a finishing salt on the finest dishes. 

It adds a gorgeous briny deliciousness to whatever dish it graces – it elevates.
